ABSTRACT

Food processing is of great importance when obtaining products with specific organoleptic, physical and chemical properties, and is the most important step to assure food safety. Chemometrics in food processing is useful for determining the influence of the production procedure on changes in the chemical composition of foods. The main limitation is the fact that microorganisms are dynamic living entities and the food is a very complex matrix. Modelling and Simulation in food processing is used as a tool in designing and optimizing the operational parameters and is an important base of product quality and safety control as well as a useful tool for developing innovative food processing technologies. The full or fractional factorial design is used for screening and separation of effects since it is based on the numbers of factors (k) which most commonly have 2 values.
