Postharvest Handling

Chestnuts are rich in starch and low in lipids, and compared to dry nuts, their high water and sugar content makes them prone to sprouting and perishing. Therefore, chestnut postharvest behaviour differs from that of other commodities. In this chapter, specific chestnut postharvest recommendations and treatments are discussed in order to limit weight loss, sprouting, internal decay, and damage caused by insects and fungi, or due to mechanical processing. Furthermore, costs and benefits of the main chestnut storage and postharvest treatments are highlighted in the technical sheets.
