ABSTRACT

Antioxidants present in fruits and vegetables play a vital role in preventing or decreasing the risk of degenerative diseases. Free radicals are most unstable and harmful molecules that damage the body cells and are responsible for degenerative diseases. Antioxidants act as defense mechanism of our body against free radicals which prevent cellular damage and thus fight with cancer, variety of diseases, and are abundantly available in various fruits and vegetables. Antioxidants are nonnutritive compounds that protect the cells from harmful free radicals. Fruits and vegetables contain various antioxidant compounds such as flavonoids, isoflavones, flavones, anthocyanins, catechins, and isocatechins rather than from vitamins C, E, or β-carotene.
