Introduction

Because the United States is such a large nation that can boast a wide range of cultures and ethnic groups, we considered it appropriate to feature a sampling of its diversity at this first-ever IACCP conference in the U.S. The four major “subcultures” that together constitute a sizeable percentage of the entire U.S. population are African Americans, American Indians, Hispanic Americans, and Asian Americans.
