ABSTRACT

Palm oil is the world’s favourite vegetable oil since its consumption surpassed that of soybean oil in 2005. It is used as a feedstock for the manufacturing of cooking oils, frying fats, margarine, and a wide range of other food applications. Due to its favourable composition, smell, and consistency palm oil is an ideal ingredient in fats, soaps, sauces, powdered milk, and ice cream. It is considered one of the best oils for frying, and as such is used frequently in households, restaurants, and industries around the world. Palm kernel oil and palm kernel meal are by-products of palm oil production. The former has many of the same qualities as coconut oil and is sought for applications in condensed milk, biscuits, and bread; giving these products volume and soft texture and making them last longer. Palm kernel meal is used in the production of foods and as a supplement in animal feed (Agricultural Forum, 2006).
