ABSTRACT

The name Beta came from Romans. It has its origin in the Mediterranean region and North Africa. Beetroot, also known as table beet, garden beet and sugar beet, are thick fleshy roots which store large amounts of reserve food. It is not as commonly grown as radish and carrot in the country. Beetroot is rich in protein, carbohydrates, calcium, phosphorous, iron, vitamin A and vitamin C. Beetroot is consumed in the form of fresh salad, vegetable and processed products as pickled and canned. After sugarcane, it is the second most important crop for the preparation of sugar. Botanically, beetroot can be classified based on binomial nomenclature as well as horticultural classification system. The herb produces thick and fleshy roots, which store a large amount of reserve food. Morphologically, the upper portion of root develops from the hypocotyl and lower portion from the taproot, from which the secondary roots arise.
