ABSTRACT

This chapter describes the main tenets of ecofeminism and veganism. Ecofeminists recognize the oppression of animals by humans in several contexts; among these, the food context is the one in which such oppression is most evident. Vegan food experiences are food experiences characterized by the absence of animal-derived products. The chapter presents foodscape concept and highlights the relationship between food, the spatial context of its supply chain, and the subjects who engage in food-related activities. The foodscape concept is applied in the tourism context as part of the recent reflections about the new role of gastronomy. Parma is part of the United Nations Educational, Scientific and Cultural Organization network of creative cities of gastronomy. Empirical part concerns the vegan food experiences offered by two holiday country houses in the Parma area. The vegan food experiences can be viewed as the manifestations of the feasibility of an alternative way to conceptualize animals and practice food-related activities.
