ABSTRACT

ABSTRACT Among the food plants, the presence of melatonin in grapes (Vitis vinifera L.) deserves particular attention because of the production of wine, an alcoholic beverage of economic relevance and with putative healthy effects. Furthermore, a number of melatonin isomers have been detected in grape products, too. In this chapter, we discuss the topic of melatonin in grapes and wine, focusing on the contribution of grapes and yeasts to the nal melatonin levels in wine and on the oral bioavailability of dietary melatonin.
