LAB species in different kinds of sausages produced in Hungary, Italy, and Greece was also found by Rantsiou et al. (2005). The clustering analysis at 70% homology gave five different clusters for the 27 isolates of Lb. plantarum, nine clusters for the 100 isolates of Lb. curvatus, and 19 clusters for the 168 isolates of Lb. sakei. The majority of the clusters were country-specific.
