ABSTRACT

Voltaire once said, “no problem can withstand the assault of sustained thinking”. In this book, we put that statement to the test. In this introductory chapter, we introduce the chapters of the book as they relate to four thematic sections: Recognizing place; Enhancing participation; Challenging markets; and Designing sustainable food futures. After describing the significance of each theme and summarizing each chapter, we explain why each chapter includes a recipe and why we are adamant that revolutions should include cooking insofar as cooking can be a revolutionary act. We conclude by proposing that the solutions advanced in this book can be read as an atlas of possibilities, noting that there are multiple roads we can, and must, travel to bring us towards our destination: just and sustainable food futures.
