ABSTRACT

This chapter proposes four types of capabilities that are identified as the foremost anchored elements for setting up a firm’s core competency, relevant for development and launching of a functional food: technology and external knowledge adjustment, market orientation, marketing and networking capabilities. This chapter therefore will discuss the following three issues. First, the functional food field as an attractive business field of the future in the context of the concept of core competencies. Second, the linkage between strategic content and strategic process, identified by extending the framework to the analysis of competencies in new product development. Third, and finally, the development of certain competencies in the processes of new product development (development and launching/marketing phases).
