ABSTRACT

Walk into the produce section of any supermarket in Hawai‘i and the first things you notice are the obvious displays of locally grown foods. Previously in the purview of organic food stores and coops such as Whole Foods and Kokua Market, the desire to eat local has led to a burgeoning of marketing around local foods. Today, not just supermarkets, but restaurants and other foodpreparing enterprises are offering whole menus based on local foods, or at least identifying local ingredients in their dishes.
