ABSTRACT

The brewery is one of the cornerstones of a city. Its heart belongs to the community. It has struggled and prospered, it has changed hands, and it has closed its doors during one generation to see it reopen in another. The craft spirits market in the United States is experiencing very rapid growth in what some project may be similar to what was seen in the craft beer market over the past years. To produce a spirit from a brewery, one needs to select the appropriate equipment, the type of still(s), and the supporting equipment for the spirit. A brewery will contain nearly all of the equipment required to complete fermentation, starting with a mill and transferring the grist to a mash/lauter tun, and subsequently, to a fermenter. A combination mash and lauter tun is also referred to as a combi-tun. Distilling yeast has very similar properties to brewing yeast strains (particularly ale, not lager, strains).
