ABSTRACT

This chapter discusses mechanisms in the shaping of organic food as a strategy in the Danish food sector since the 1980s as a contribution to the discussion of strategies for the development of more sustainable production and consumption of food. The national support scheme idea was to generate consumer confidence in organic food to develop a bigger market for such food. The chapter shows the relationships between conventional and organic food stakeholders can be characterised by elements of competition and cooperation and have been instrumental in shaping each other. The relative success of organic food has brought competition from 'green' concepts developed by conventional food companies. The knowledge system has played an important role in the development of organic food production and consumption. The analyses of organic agriculture and food have shown how governmental regulation has shaped the concept of organic agriculture. Organic agriculture has potential as an environmental strategy in relation to several environmental topics being discussed in Denmark.
