ABSTRACT
Campylobacter spp. are the leading cause of foodborne gastroenteritis in humans worldwide. Campylobacter can also trigger serious post-infectious sequelae such as reactive arthritis and Guillain-Barré syndrome. It is important to understand the latest Campylobacter epidemiology, pathogenesis, genomics, identification, and detection methods. This chapter will present an overview of the general concepts, mechanisms, new identification and detection methods. We will focus on Campylobacter jejuni and Campylobacter coli, which are the main causes of Campylobacter enteritis in humans, to improve food safety as well as public health.
