Zucchini is the most popular type of summer squash that can be found in dark, medium and light green colours as well as yellow-orange. Zucchini is a kind of summer squash, meaning the fruits have soft, edible skin. Zucchini is a rich source of nutrients, especially the natural antioxidants beta-carotene, folic acid, and vitamins C and E. Mature zucchini fruits can be as much as 1 m long but the larger ones are often fibrous and with the flowers attached are a sign of truly fresh and immature fruits, which are especially sought by many people. Research has shown that its seeds also contain traces of cancer-preventing substances, known as protease trypsin inhibitors, which inhibit the activation of viruses and carcinogens in the human digestive tract. The plant has the bush habit rather than the vining habit of the winter squashes. Zucchini is a warm season crop that grows well in nearly all climates.
