Vegetables are important protective foods and highly beneficial for the maintenance of fresh and prevention of disease. Similar to solar and sun drying, convective dryers are simplest and most convenient method of dehydration of vegetables. Tray driers have insulated cabin made up of iron, provision for circulating hot air through fan and source for heating the air. Roller drying process involves placing of vegetable slurry, paste or concentrated fluid as thin film upon the smooth surface internally steam heated and rotating metal drum. Spray drying is a process of instantaneous removal of moisture from a liquid being taken place. Osmosis is known as movement of water from higher concentration to lower concentration through semipermeable membrane. Ivy gourd fruits are rich sources of P-carotene, a major vitamin A precursor from plant sources along with good sources of minerals such as calcium, phosphorus, iron, copper and potassium. Vacuum drying is an important process for heat-sensitive materials.
