270Dairy industry is engaged in the processing of milk and manufacture of various dairy products, which require electrical and thermal energy for various dairy processing operations. Energy management is very important, not only for reducing the cost of processing but also to help in the reduction in emission of GHGs in the environment. In this regard, many national, international, and intergovernmental bodies across the world have been working to formulate programs to reduce the energy use in various sectors to combat the phenomena leading to global warming.

Energy audit is the basic requirement for the conservation of energy in dairy plants. Based on the systematic preliminary and secondary energy audits, detailed plan of work for the conservation of energy for the various dairy processing operations can be executed. This chapter covers details on energy audit, principles of energy management, energy analysis of various unit operations involved in dairy plants, and various ways of conservation of energy in dairy plant utilities. The possibilities of energy conservation in lighting, effluent treatment, compressed air supplied, CIP, and all other operations are also discussed with a few case studies. Scope of energy conservation by adopting newer technology, process re-engineering and use of non-conventional energy is also presented.
