ABSTRACT

Purpose of incorporating fruits and vegetables in extruded snack products was to increase the consumption of food group which is minimally processed while at the same time increasing the nutritional value. Fruit and vegetable by-products include: peels, stem, core, skin, seeds, pomace, pulp and trimmings, etc., and these are mostly thrown as waste or used for non-commercial purposes or used in commercial purposes with very complex methods. However, extrusion technology provides an easy method for their commercial utilization, which is very useful for any industry. Fiber concentrates obtained from apple can be used as a volume replacer and thickener in development of fiber rich and low calorie diets. Extrusion of dried orange pulp resulted in enhanced production of soluble dietary fibers by changing the process parameters. Global trend is towards consumption of healthy snacks and the use of fruits and vegetables in extruded snacks serves as the best means for focusing on the nutritional aspect of the products.
