ABSTRACT

Fruits and vegetables are mostly preferred in their fresh forms, but due to their high water content they become vulnerable to physical and pathological damage leading to reduction in storage life. Dehydro-frozen fruits and vegetables seem to have a better quality over conventionally frozen products and suitable for sensitive fruits and vegetables such as cucumber. The air blast freezer uses the cooled air as the cooling medium. Due to its temperature stability and flexibility for several product types, size and shape, these types of freezers are commonly used for freezing of different fruits, vegetables and their products. Weight loss due to dehydration is an important parameter that must be considered for freezing of unpacked products. Color is the most important attribute of fruits and vegetables as it influences the acceptability by the consumers. Proper and successful application of freezing of fruits and vegetables or their products would enable all year round availability of these products, even seasonal fruits and vegetables.
