ABSTRACT

Fruits and vegetables are very essential for healthy diet. In 2002, WHO reported that low consumption of fruits and vegetables may cause several diseases such as ischemic heart disease 31% and stroke 11% all around the world. Pressure disrupts the activity of enzymes engaged in DNA replication and transcription process of microorganisms leading to condensation of genetic material by degradation of chromosomal DNA hence affecting functionality of nuclear material. When a high level pressure is applied on microbes so many changes occurs such as disruption of membrane permeability, changes in cell morphology, interference in genetic mechanism and inactivation of enzymes; and finally cause the death of microorganisms. Many researchers have worked on high pressure processing (HPP) and concluded that the inactivation of microbial population is occurred by the breakage of non-covalent bond such as, hydrogen, ionic and hydrophobic bonds at high pressure. The cost range of HPP treatment is 3 to 10 cents/pound more than convecgtional thermally processed products.
