ABSTRACT

Consumer sensory testing is necessary in food product evaluation for product development guidance, product improvement and optimization, and maintenance. Consumer affective tests appear to be relatively simple to plan and conduct. Sensory acceptance tests are conducted during product development for product development guidance, to screen products, and to identify those products that are significantly disliked and those that match or exceed a specified target product for acceptance. Sensory acceptance tests indicate the acceptance of a product without the package, label, price, and so on. Sensory analysis provides the product development team with information on the sensory properties of products, ingredients, or other related information and services, and how these relate to consumer perception of quality characteristics and to consumer liking. Sensory evaluation has proven to be a necessary and powerful tool to guide food product development.
