ABSTRACT

Fats and oil are major nutritional compounds and the main source of energy (38 kJ/g offat)forthehumanbodyandcellcompounds.Theyalsoprovideregulatorysubstancesthatplayimportantphysiologicalroles.Foralongtime,polyenoicfatty acids(PEFA)n-3andn-6wereidentiŒedasimportantnutritionalcompoundsand laterasbeingnutraceuticalcompoundswithbiomedicalapplications(Moghadasian 2008). They are also precursors of hormone-like compounds known as eicosanoides (Shahidi and Wanasundara 1998).
