ABSTRACT

Why bother to analyze foods for pesticide residues? If good agricultural and manufacturing processes are followed, then violative levels of pesticide residues are not going to occur. In theory, all farmers and food processors would follow proper procedures, and analyses of the food would be super¯uous. In the real world, though, appropriate practices are not always followed and pesticide residue violations do occur. Also, how can one verify that good practices were followed or no mistakes were made unless routine monitoring is conducted? In this instance, ignorance is not bliss; it is a liability for lawsuits and/or enforcement actions.
