ABSTRACT

Knowledge of the glass transition behavior of frozen food systems is vital to understand the freezing process and the stability of frozen foods during storage. Our understanding of transition temperatures and relaxation kinetics can improve the storage life and quality of frozen foods. This chapter presents determination methods and data on transition temperatures of frozen food systems, and examines the relevance of transition temperatures to the stability of frozen food systems.
