ABSTRACT

As human population increases, great quantities of waste are generated while more utilization of natural resources is required. With the development of new processing technologies, these waste products can be utilized and recycled better (Butz and Tausher 2002; Corrales et al. 2008). For example, great quantities of by-products in the form of pericarp and seeds are generated during processing of litchi and longan fruits, even though these by-products contain signi™cant amounts of secondary metabolites such as anthocyanins, ªavonoids, phenolic acids, hydrolyzable tannins, and polysaccharides (Lee and Wicker 1990; Sarni-Manchado et al. 2000; Zhang et al. 2000; Jiang et al. 2006; Yang et al. 2006; Prasad et al. 2009a, 2010). These byproducts are reported to have antibacterial, antiviral, antioxidant, anti-inªammatory, and anticarcinogenic properties (Namiki 1990; Halliwell 2007; Prasad et al. 2009b; Sun et al. 2010), and to exhibit great potential for further utilization in the pharmaceutical, metallurgical, and food industries.
