ABSTRACT

Chromatography is a highly versatile separation technique used in the food industry mostly for the purication of saccharides and also proteins or chiral agents. The main downside of chromatography is its high cost. Therefore, for many applications, it is more viable to use less expensive techniques such as membrane ltration or crystallization. The advantage of chromatography is its remarkable selectivity, allowing the separation of very complex mixtures in a single step. This makes it a technique of choice for the separation of valuable products that are difcult to be obtained with demanded purity by other techniques.
