ABSTRACT

Acacia gum (also known as gum arabic) is an all-natural sap that exudes from stems and branches of acacia trees (Leguminosae), which grow in the Sahel zone of Africa. ´e Codex Alimentarius Commission’s Committee on Food Additives and Contaminants (CCFAC) determined in 1999 that the only two botanical species allowed for food applications are Acacia senegal and Acacia seyal. ´is position is re ected in the Joint FAO/WHO Expert Committee on Food Additives (JECFA) monograph for acacia gum (FAO Food and Nutrition Paper 52 Add 7, 1999).
