ABSTRACT

Classically, collagen is one of the most plentiful structural proteins present in humans. It is well known that collagen includes 1/3 of all protein and 3/4 of the waterless weight of skin. Additionally, it is the most common part of the extracellular matrix (ECM) in humans and has a triple helical structure (Brinckmann 2005). Biochemically, it is made up of restating uncommon amino acids, including glycine (35%), proline and hydroxyproline (21%), and alanine (11%) (Figure 35.1) (Brinckmann 2005).
