ABSTRACT
Handwashing, the removal of transient skin flora by cleansing or disinfection, is an agreed priority in the food industry yet compliance drives a different reality. Science has founded many new technologies but has done little to change behaviors at either the management or line worker levels. It is often neither a priority concern in the boardroom nor along food’s circuitous route from farm to fork.
