ABSTRACT
Glycinin is a storage soybean protein belonging to the legumin family (11S globulin fraction). Legumins have high nutritional value, however, due to the peculiarities of molecular structure (high stiffness, low solubility near the isoelectric point) and, consequently, not enough high-functional properties, their use is limited.
