No discussion of supplementary vitamins and antioxidants would be appropriate without first emphasizing the importance of diet. Physicians and even dietitians tend to vastly underestimate the importance of diet because of a misplaced emphasis on fasting cholesterol levels. Because diet has little effect on fasting cholesterol, we tend to assume that it is of relatively minor importance compared with the effect of drugs that reduce fasting cholesterol levels by 40%. Nothing could be further from the truth.
