ABSTRACT
Before introducing the other chapters of this book, which will contribute new knowledge on the food processing (F & B) industry, this chapter assesses what we already know about innovation in this industry. We review some of the most important findings of previous literature in this field in order to present some broad empirical regularities, that is, stylized facts, about this topic. We also detect areas of analysis where consensus among scholars has not yet been reached and point to research questions that require more empirical investigation.
