ABSTRACT

Saffron, since the ancient times, has been in used to flavor different kinds of dishes, because of its beautiful color, aroma and exceptional taste. These days, people again prefer to use the natural products rather than the chemical and synthetic ones. Saffron is used for getting natural color, as a medicinal herb to reduce level of bilirubin of the blood and anti-cancer medicines (5). In the same manner, the petal of saffron can be used as means to give food color as an antisyanin (21). Its leaves are also used as fodder for domestic animals (46).
