ABSTRACT

As emphasized previously in this volume, maize continues to be the world’s most abundant food crop, recently exceeding 1.04 billion tons produced on ~184.8 million ha (FAO 2014). Maize is also an essential staple crop in many developing countries, and thus critical for global food security. Maize is popular for its rapid processing time from dry grain to various flours and markets, and its nutritional value for both human and livestock consumption.
