Experience has shown that the production of safe and wholesome food requires measures along the whole chain – from ‘farm to fork’ or ‘from gate to plate’. The necessary measures and structures can be broadly separated into a set of ‘prerequisites’, often termed ‘Good Farming Practice’, and measures targeted against specific hazards to human or animal health (‘interventions’).
