ABSTRACT

Potatoes are the largest vegetable crop grown in the United States, with a production value of US$4 billion annually, which is multiplied several times over through packaging and processing industries. The Pacific Northwest (PNW) states of Idaho, Oregon and Washington form the largest potato production region of the United States. Although potatoes are grown commercially in more than 30 states, these PNW states represent three of the top five states in production and produce nearly 60% of the nation’s crop (USDA, 2016). Production in the PNW includes both fresh-market potatoes and potatoes for processing.
