Scheme 5.1 Reactions catalyzed by glycosyltransferases (A), glycoside hydrolases (B) and phosphorylases (C). Synthesis, hydrolysis and phosphorolysis of sucrose are used as examples. In panel B, the glucosyl moiety of sucrose is transferred to water. Depending on the stereochemical course of the enzymatic reaction (see later), a-or b-glucose could be the actual product of hydrolysis. However, in mutarotation equilibrium in solution as shown, a mixture of anomeric forms will be present. Glycosyl acceptors are labelled in red.
