ABSTRACT

Waste management is one of the major issues of developed world, given the growth of population and consumerism verified in the last years. The process of extraction can be used in the valorisation of food by-products and residues, namely in the recovery of bioactive components. However, traditional methods include some disadvantages, which can be diminished with the use of ultrasounds. This manuscript represents a review of the application of ultrasounds on the enhancement of the extraction process of components from food waste.
