ABSTRACT
An emulsion is a heterogeneous dispersion composed of two immiscible liquids (by convention described as oil and water) one of which is dispersed uniformly as fine droplets throughout the other. This entry reviews the formation and characteristics of an emulsion, examines their stability and stabilization, and discusses pharmaceutical and biological applications of microemulsions.
