ABSTRACT

The puffer fish has the highest market value of any fish for “Fugu cooking” in Japan, Korea, and China, in spite of the fact that their internal organs contain a potent poison called tetrodotoxin. Since the artificial seed production of puffer fish was successfully developed in 1962, it has been cultured from the larval stage to marketable size in Japan. About 7,200,000 puffer fish larvae of 50 mm in length were produced for aquaculture and released to the sea in 1987. In Japan, the total production of puffer fish was only 69 t in 1980, but it increased to 1028 t in 1987.
