ABSTRACT

Food production and processing is a major activity in the United States and elsewhere in the world. Patent protection is often important in developing and marketing equipment and food products; chemical engineers with law degrees often work in patent and corporate law. Product quality is of great importance in the marketing of foods. Since processing can affect product quality, it is very important as well. While process development is shown separately from food product design and development, in some cases they are very closely related because of the effect of processing on product quality. Since food preservation and safety are of great importance in the food industry, quality control receives considerable attention. Food chemistry and microbiology are important sciences for chemical engineers who work in the food industry. The preservation of crops and foods has been a central concern for many centuries. Food processing often involves chemical separations to obtain desirable products.
