ABSTRACT

Torry Research Station is the UK government laboratory concerned with the investigation of all aspects of fish technology. In the food industry, image analysis machines are being developed and used for a large number of purposes. N. Sarker and R. R. Wolfe have developed and implemented image analysis and pattern recognition algorithms for orientation of fresh market tomatoes and classification has an error rate of less than 8%. Image analysis systems have and are increasingly being designed for use in the fish and food industries. The minimum value of mismatch is used to compare the different species of fish. Lumetech produces a machine that can reduce bones and fins to 10-20% of the usual incidence in fish fillets. H. Wagner and J. H. Walter suggest using the back line of a fish as a criterion for distinguishing between the different species of fish.
