ABSTRACT

Applications of vision to the fish and fish product industry should be highly specific, owing mostly to the threedimensional flexible nature of these objects and to difficult specular illumination problems. Properties rather typical to fish will require novel solutions or methods, which, in turn, may benefit other application fields by a reverse technology transfer. This chapter presents novel methods or technological solutions for exploitation first in the fish industry. Sensor fusion involves a number of basic steps, such as positional registration, attribute aggregation, and attribute fusion, which furthermore allows for concurrent processing and high information compression rates. A color spectrum active lighting technique is ideal for grading of freshness, but also useful for fish species discrimination. Trimming fish cubes for irregular asperities will involve cube position and orientation registration from video or charge coupled device and precise following of the nominal contour by a laser beam to pick up gaps or too big spillovers of meat in three dimensions.
