ABSTRACT

I. INTRODUCTION Glutathione (GSH) is among the most important antioxidants in biological systems, and several strategies have been used to increase GSH and thereby protect against oxidants and reactive electrophiles (1). The simplest approach is to supply glutathione directly as an oral preparation (2). The present chapter is an update of previous reviews, which discuss in detail glutathione content in foods (3,4), cell transport of glutathione (5-7), and absorption and utilization of orally supplied glutathione (2).
