ABSTRACT

There is public health interest in the potential of lycopene and lutein for the prevention of particular chronic diseases: cancer (prostate) and age-related macular degeneration, respectively. This chapter reviews what is known about lycopene and lutein from a metabolic point of view and their possible roles in the prevention of chronic disease. The chapter also focuses on what is not known about these compounds and what needs to be accomplished before health professionals can embrace them as part of a diseaseprevention strategy.
