ABSTRACT

The minimum structural requirement for a branched oligosaccharide to be a substrate for pullulanase/limit dextrinase is a maltose residue on either side of the -1,6 linkage (Fig. 2); i.e., the enzymes cannot remove a 1,6linked glucosyl stub from a chain of -1,4-linked glucose residues, or remove a 1,4-linked glucose chain attached to carbon 6 of a single glucose unit. The enzymes have high activity on 63--maltosyl maltotetraose and 63-- maltotriosyl maltotetraose (2, 3) (Fig. 2).
