ABSTRACT

This book is not the proper forum for discussing the manufacture of every processed vegetable available in the market. However, regulatory agencies such the U.S. Department of Agriculture (USDA) and the U.S. Food and Drug Administration (FDA) have issued some minimal criteria for each processed vegetable such as what they are, what types and styles are available, and so on. The information in this chapter describes each available frozen vegetable product and has been modified from the product grades (USDA) and product standards (FDA). Product standards and product grades are established to achieve two objectives: to assure product safety and to minimize economic fraud.
