ABSTRACT

The interest in fortifying food products with phytosterols has increased during the last decade because of their cholesterol lowering property in humans (38-40). The author (41) studied some polar oxidation products of phytosterols in raw materials (wood sterols), and in a number supplement tablet preparations based on phytosterols commercially available in Finland. A sample of a pure phytosterol mixture, which was subjected to oxidation by treatment with high temperature, was analyzed against the unheated raw materials (Table 7).
