ABSTRACT

The nutritional value of proteins in human milk for growing infants has long been appreciated. More recently, non-protein nitrogenous compounds, immunological components, and growth modulating factors have been identified and quantitated which may well play important roles in the growth, development, and immune responses of the breast-fed infant. It is the purpose of this book to provide an update on the biochemistry of all known nitrogenous compounds currently identified in human milk. For each of these, the proven or postulated role in infant growth and development will be discussed.
